The Creation by Global Baker, Dean Brettschneider
The founder of Baker & Cook, Dean flew into Singapore early 2011 to catch up with a friend. After a casual bike ride, they decided to take a break and were having a lazy chat when a light bulb moment occurred that Singapore lacked a good bakery. They then took a walk around the sleepy suburban neighbourhood on Hillcrest Road and the rest is history. To date, Dean not only co-owns but is also the founder of Baker & Cook and Plank Sourdough Pizza, Mo & Jo Sourdough Burgers and Brettschneider’s Baking & Cooking School in Singapore. He is also an award-winning author of seventeen cookbooks, presenter and judge in multiple TV shows.

Sourdough is Baker & Cook’s DNA and they pride themselves on this key element even across their sister brands – Plank Sourdough Pizza and Mo & Jo Sourdough Burgers. There is even a school built and branded as Brettschneider’s Baking & Cooking School to teach you how to make your favourite bread and pastry from Baker & Cook.
What’s Special About Sourdough
The common denominator across all the brands – sourdough! The starter, ‘Little Johnny’ is over 35 years old and has followed Dean across many countries. The famous Pain au Levain is made using simple ingredients – flour, water and salt. It is good for your gut and more digestible than regular bread as the slow, long and cool fermentation process breaks down gluten, which can cause bloating. Lactic acetic in sourdoughs also helps your body to absorb more nutrients! Baker & Cook’s sourdoughs feature a nutty flavour, caramelised crust with a moist, mild, acidic and irregular open crumb.
